Whole baked pompano
Pompano are a very fun fish to catch but even better to eat. During the winter time they push in through Sebastian inlet and onto the flatds. This year the pompano fishing has been exceptional and we have been slaying them! People always ask me how to prepare it and this is the recipe that I give them.
Ingredients:
Whole pompano
2 cloves of garlic
Extra virgin olive oil
1 lemon
Bundle of thyme
Everglades heat seasoning (or favorite Cajun seasoning)
Salt
Pepper
If you caught the pompano yourself and not on a Filet show fishing charter you will have to prepare the fish to be cooked whole. We do this by cutting from the anal fin to the gills and removing all the guts. Next we will cut all the gills out and cut off the pec fins. Finally we want to score the fish as seen above.
Set your oven to 375 and then chop 2 cloves of garlic. Pour a teaspoon of oil over the side of the fish and rub half of the chopped garlic into the slits. Flip the fish over and repeat. Next we will dust the fish with the seasoning and a pinch of S&P. We are going to stuff the inside cavity of the pompano with the thyme and as many lemon slices as you can fit. Put rack on top your baking pan to ensure the fish gets crispy on both sides. cook for 25 minutes flipping the fish halfway through. Pull out of the oven and enjoy! Watch out for bones.
