Hey guys, my name is Justin Ambrosio and I'm the captain of Filet Show Fishing Charters out of Sebastian Fl.

I'm creating this recipe blog because on nearly every fishing charter I have my guests ask what the best way to prepare the type of fish they caught. Having worked in the restaurant business for 15 years I more than know my way around the kitchen and I like to put my own unique and healthy (most of the time) spin on things. This will hopefully be the answer to all of your questions as over the next few months I will catch and prepare the fish the way I believe is the best recipe for that fish. I will provide pictures as well as step by step instructions covering my favorite ways to cook each species of fish we may encounter.
