Cajun Shrimp Mac N' Cheese

With Sebastian inlet having an unbelievable shrimp run this year I thought I would put up a creative and delicious way of cooking them when you fill your coolers.

Captain Justin's cajun shrimp mac and cheese

Ingredients:

1/2 lb Shrimp

1/2 lb Smoked Gruyere Cheese

1/2 lb Cheddar Cheese

1 Cup half n half

1/2 cup milk

12oz box of Shell Pasta

1 tbsp. favorite Cajun spice

4oz butter

1/2 cup Panko bread crumbs

1 teaspoon nutmeg powder

1 tablespoon truffle oil (optional)

First we are going to start by boiling the pasta in salted water until its al dente. Drain in strainer and let dry for 15 minutes.

Next we are going to make the cheese sauce. We start by adding the cream and the milk to a large pan or a pot and heating at med high heat. When it starts to simmer add all the cheese stirring so it doesn't burn. Once the sauce has a creamy consistency add nutmeg and a half tbsp. of Cajun spice.

Dust the shrimp with Cajun seasoning and sauté on high heat with whatever kind of oil or butter you'd prefer. Cook them just until they start to curl, they will finish cooking in the oven.

Add Pasta, shrimp and sauce to a buttered 8x8 baking dish. Sprinkle Panko bread crumbs on top and drizzle melted butter and truffle oil on top of them.

Put in the oven and bake on 350 for 12 minutes. Then place mac n cheese on op rack and broil for another 3 minutes to get a crispy crust. Enjoy and don't forget to book a trip on Sebastian's fastest charter fishing boat when you are in town!
